Chicken Fajita Roll-Ups



Another fun take on fajitas is these Chicken Fajita Roll-Ups. Fajita spices are used to season tender chicken breasts, which are then rolled up in a flour tortilla with sauted bell peppers, onions, and cheese. The tortilla is then baked until it is golden brown. They're great for a quick and tasty dinner!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 packet fajita seasoning mix
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 cup shredded cheese cheddar or Mexican blend
  • 4 large flour tortillas
  • 2 tablespoons olive oil

Instructions:

Warm the oven up to 190C 375F

Put each chicken breast between two pieces of plastic wrap and pound them until they are all the same thickness

Season both sides of each chicken breast with fajita mix

Put olive oil in a pan and heat it over medium-high heat

It will take three to four minutes on each side for the chicken breasts to get a light brown color and be fully cooked

Take the chicken out of the pan and set it aside to cool down a bit

Put sliced onion and bell peppers in the same pan

About 5 minutes of cooking will soften the food

Cover a tortilla with shredded cheese

Place a cooked chicken breast in the middle of the tortilla

Add sauted bell peppers and onions on top of the chicken

Place the tortilla seam-side down in a baking dish and roll it up tight

Do it again with the rest of the tortillas and ingredients

The tortillas should be baked in a hot oven for 15 to 20 minutes, or until they are golden brown and crispy

Cut each roll-up into rounds, and then serve them hot
