Bacon and Corn Griddle Cakes



A delicious take on pancakes are these savory Bacon and Corn Griddle Cakes. Full of sweet corn, crispy bacon, and gooey cheese, these are a satisfying and tasty option for breakfast or brunch.

Ingredients:

  • 6 slices of bacon, cooked and crumbled
  • 1 cup corn kernels fresh or frozen
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup buttermilk
  • 1 egg
  • 2 tablespoons melted butter
  • 1/4 cup green onions, finely chopped
  • 1/4 cup cheddar cheese, shredded
  • Maple syrup for serving

Instructions:

Mix the flour, baking soda, baking powder, salt, and black pepper in a sizable mixing bowl

Mix the melted butter, egg, and buttermilk in a different bowl

Mixing until just combined, pour the wet ingredients into the dry ingredients

Add the chopped green onions, crumbled bacon, shredded cheddar cheese, and corn kernels and fold gently

Grease a big skillet or griddle with cooking spray or butter and preheat it to medium heat

To make pancakes, ladle 1/4 cup portions of the batter onto the hot griddle

Spread the batter into a circle using the back of a spoon

Cook the griddle cakes for two to three minutes on each side, or until they are cooked through and golden brown

While you cook the remaining batter, remove the griddle cakes from the griddle and keep them warm

Drizzle the Bacon and Corn Griddle Cakes with maple syrup and serve hot
