Homemade Pancake Mix

Ingredients:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons melted butter
Instructions:
In a large bowl, whisk together the flour, baking powder, salt, and sugar
In a separate bowl, beat the egg and then add the milk and melted butter
Mix well
Pour the wet ingredients into the dry ingredients and stir until just combined
Do not overmix; lumps are okay
Preheat a griddle or non-stick skillet over medium-high heat and lightly grease it with butter or oil
Pour 1/4 cup of pancake batter onto the hot griddle for each pancake
Cook until bubbles form on the surface and the edges look set, about 2-3 minutes
Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through
Serve the pancakes hot with your favorite toppings, such as syrup, fresh fruit, or whipped cream
