Chocolate Chip Shortbread Cookie Dippers



Indulge in the perfect combination of buttery shortbread and chocolate chips with these delightful cookie dippers. They're easy to make and even easier to enjoy, whether as a snack or a sweet accompaniment to your drinks.

Ingredients:

  • 1 cup 2 sticks unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup mini chocolate chips
  • 1/4 cup semisweet chocolate, melted for dipping

Instructions:

In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy

Add the vanilla extract and mix until combined

Gradually add the all-purpose flour and salt to the mixture, mixing until a dough forms

Fold in the mini chocolate chips, distributing them evenly throughout the dough

Shape the dough into a rectangular log, about 2 inches in width

Wrap in plastic wrap and refrigerate for at least 1 hour

Preheat your oven to 350F 175C

Line a baking sheet with parchment paper

Slice the chilled dough log into thin cookie dippers, about 1/4 inch thick, and place them on the prepared baking sheet

Bake in the preheated oven for 12-15 minutes, or until the edges of the cookies are golden brown

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely

Once the cookies are completely cool, melt the semisweet chocolate in a microwave-safe bowl in 20-second intervals, stirring in between, until smooth and melted

Dip one end of each cookie dipper into the melted chocolate and place it on parchment paper

Allow the chocolate to set

Serve the chocolate chip shortbread cookie dippers with a glass of milk or your favorite hot beverage
