Hearty Crock Pot Winter Soup
This hearty Crock Pot Winter Soup will keep you warm in the evenings. This hearty soup is great for cold nights because it's full of pork, vegetables, and orzo pasta.
Ingredients:
- 1 lb pork shoulder, diced
- 4 cups beef or vegetable broth
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can 14 oz diced tomatoes
- 1 cup frozen peas
- 1 cup corn kernels
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups kale, chopped
- 1/2 cup orzo pasta
- Fresh parsley for garnish
Instructions:
Place diced pork shoulder, broth, carrots, celery, onion, garlic, diced tomatoes, peas, corn, thyme, rosemary, salt, and pepper in the crock pot
Stir well to combine and ensure the pork is submerged in the liquid
Cover and cook on low for 6-8 hours or until the pork is tender
About 30 minutes before serving, add chopped kale and orzo pasta to the crock pot
Stir gently
Cover and continue cooking until the pasta is tender
Adjust seasoning if needed
Serve the hearty winter soup hot, garnished with fresh parsley
