Keto Pressure Cooker Chicken Stew



A delicious and hearty keto-friendly chicken stew made in the pressure cooker. Packed with low-carb vegetables and flavorful spices, this comforting dish is perfect for a satisfying ketogenic meal.

Ingredients:

  • 5 lbs boneless, skinless chicken thighs
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced celery
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 cups chicken broth
  • 1/4 cup heavy cream
  • 2 tbsp olive oil

Instructions:

Season chicken thighs with thyme, rosemary, paprika, black pepper, and salt

Turn on the pressure cooker and select the saut function

Add olive oil to the pot and brown the seasoned chicken thighs on both sides

Remove and set aside

Saut garlic, onion, bell peppers, and celery until softened

Add cauliflower and broccoli to the pot

Place the browned chicken thighs on top of the vegetables

Pour chicken broth over the ingredients

Secure the lid and set the pressure cooker to high pressure for 8 minutes

Once cooked, release pressure naturally for 5 minutes, then quick release any remaining pressure

Remove the chicken and shred it

Return shredded chicken to the pot

Stir in heavy cream and let it simmer for an additional 5 minutes

Adjust seasoning if necessary and serve hot
