Keto Spaghetti Squash Alfredo



This Keto Spaghetti Squash Alfredo is a creamy and rich low-carb alternative to regular pasta. It tastes great and fills you up without making you feel bad.

Ingredients:

  • 1 medium spaghetti squash
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Instructions:

Get the oven ready by heating it up to 400F 200C

Split the spaghetti squash in half down the middle, and then scoop out the seeds

Salt and pepper the cut sides of the squash, then rub them with olive oil

Lay the squash halves on a baking sheet with the cut side down

Bake for 40 to 45 minutes, or until they are soft

Put olive oil in a skillet and heat it over medium heat while the squash bakes

Add the minced garlic and cook for about one minute, until the garlic smells good

Add heavy cream and bring to a low boil

Turn down the heat and add the grated Parmesan cheese

Stir the sauce until it becomes smooth and thick

When the squash is done, use a fork to pull the flesh apart into strands that look like spaghetti

Put some squash noodles on each plate and then add Alfredo sauce on top of them

Add fresh parsley as a garnish if you like

Enjoy while hot!
