Kale Salad with Stewed Tomatoes and White Beans
Ingredients:
- 6 cups kale leaves, washed, stemmed, and torn into bite-sized pieces
- 1 can 15 oz white beans, drained and rinsed
- 1 can 14
- 5 oz diced stewed tomatoes
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and black pepper to taste
- 1/4 cup grated Parmesan cheese optional
- Croutons for garnish optional
Instructions:
Put the kale, white beans, and chopped red onion in a large salad bowl
Set the olive oil in a saucepan and heat it over medium-low heat
When you add the minced garlic, cook for about 30 seconds or until the garlic smells good
Put the diced stewed tomatoes from the can with the juice into the pan
Let it simmer for 5 to 7 minutes, stirring often, until it's a little less thick and the flavors blend
To taste, add salt and black pepper
Take the tomato mix off the heat and add the red wine vinegar
Allow it to cool a bit
Add the tomato mixture to the kale salad and mix it all together
The tomato mixture's heat will make the kale wilt a bit
You can add grated Parmesan cheese and croutons to the salad if you want to make it taste and feel better
