Ribeye Roast Sandwich With Onions, Arugula And Fontina Cheese
The Ribeye Roast Sandwich with onions, arugula, and fontina cheese is a great mix of tastes and textures. The sweet caramelized onions, peppery arugula, and creamy fontina cheese go very well with the tender ribeye slices. This meal is filling and can be eaten for lunch or dinner.
Ingredients:
- 1 lb ribeye roast, thinly sliced
- 1 onion, thinly sliced
- 2 cups arugula
- 4 slices fontina cheese
- 4 sandwich rolls
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: mustard or mayonnaise for spreading
Instructions:
Preheat a skillet over medium heat and add olive oil
Add thinly sliced onions to the skillet and cook until caramelized, about 10-15 minutes
Remove from skillet and set aside
In the same skillet, add thinly sliced ribeye roast and cook for 2-3 minutes on each side until browned
Season with salt and pepper to taste
While the meat is cooking, slice the sandwich rolls in half and toast them lightly
Once the meat is cooked, assemble the sandwiches by layering the caramelized onions, arugula, cooked ribeye slices, and fontina cheese slices on the toasted rolls
Spread mustard or mayonnaise on the top half of the rolls if desired
