Caramelized Peach Ice Cream
Ingredients:
- 4 ripe peaches, peeled, pitted, and diced
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup brown sugar
- 4 large egg yolks
Instructions:
Over medium-low heat, mix diced peaches, sugar, and lemon juice in a saucepan
It will take about 10 minutes of cooking until the peaches turn brown
Now take it off the heat and mix in the vanilla extract
Wait until it's cool enough to touch
Mix heavy cream, whole milk, and brown sugar in a different saucepan
Stir the mixture every so often while heating it over medium-low heat until it starts to steam
Whisk egg yolks in a bowl until they are smooth
To temper the eggs, slowly whisk in about a cup of the hot cream mixture
Put the egg mixture back into the pan with the rest of the cream mixture
Stir the mixture all the time over medium-low heat for about 5 to 7 minutes, or until it gets thick enough to coat the back of a spoon
Do not let it get too hot
Use a fine-mesh sieve to pour the custard into a clean bowl
Throw away any solids
Allow to cool a bit
Add the peaches that have been caramelized to the custard and mix them in
Put it in the fridge with the lid on for at least 4 hours or overnight until it's cold
Once the ice cream mixture is cold, use an ice cream maker and follow the directions on the box
After churning the ice cream, put it in a container that can go in the freezer
Freeze it for about 4 hours or overnight, until it is firm
