Pecan Pie Filling Drizzled Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pecans
- 1/2 cup corn syrup
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
Instructions:
Warm the oven up to 375F 190C and put parchment paper on baking sheets
Melt the butter and mix it with the white sugar and brown sugar in a large bowl until the mixture is light and fluffy
One at a time, add the eggs and beat well after each one
Add the vanilla extract and mix well
Mix the flour, baking soda, and salt together in a different bowl
Slowly add the dry ingredients to the wet ones and mix them together until they are just combined
Add the chopped pecans to the cookie dough and mix them in until they are spread out evenly
Round tablespoons of dough should be dropped onto the baking sheets that have been prepared, leaving enough space between each cookie
For 10 to 12 minutes, or until the edges are golden brown, bake the cookies
Make the pecan pie filling drizzle while the cookies are baking
Put the heavy cream, corn syrup, and vanilla extract in a saucepan and mix them together
Stir the mixture all the time over medium-low heat until it is smooth and a little thicker
Take the cookies out of the oven and let them cool for a few minutes on the baking sheets
Then, move them to wire racks to cool all the way down
Spread the pecan pie filling on top of each cookie with a spoon or a piping bag after the cookies have cooled
Give the drizzle some time to set before serving the tasty cookies with pecan pie filling drenched in it
